Grain Amaranth Grain amaranth is a wonderful plant to grow. Aside from being an attractive plant, it is extremely adaptable to adverse growing conditions. It resists heat and drought, has no major disease problems, and is among the easiest of plants to grow. Simply scratch the soil, plant some seeds, water and you will be rewarded by these lovely plants. It can be cooked as a cereal, ground into flour, popped like popcorn, sprouted or toasted. Red amaranth was used by the Aztecs as part of religious worship. When the Spanish arrived in Central America intent on spreading Christianity, they felt that by outlawing some of the iconography it would be easier to convert natives. Because of this some species almost became extinct. Luckily the plant is regaining popularity. With its high protein content and high yields this is a good thing.
